Egg Avial


Ingredients:

1. Eggs : 3
2. Potato/drumstick : 1
3. Onion : 1
4. Coconut : 1/4 (grated)
5. Turmeric powder: 1/8 teaspoon
6. Chilli powder : 1/8 teaspoon
7. Garlic : 2 flakes
8. Cumin seeds : A pinch
9. Coconut oil : 1 teaspoon
10. Curry leaves : 1 strand
11. Salt : to taste

Method of Preparation:

Hard boil the eggs, cool, remove the shell and cut to 6 long pieces each and keep aside. Cut the pototo/drumstick and onion into 11/2" long pieces and cook with one cup of water,turmeric powder, salt and chilli powder till the potato pieces are done. Coarse grind the coconut, cumin seeds and garlic and add to the cooked vegetable. Bring to a boil on low fire. Add the egg pieces, coconut oil and curry leaves and remove from fire. Mix lightly with spoon and serve.
