Egg Masala


1. Eggs : 4
2. Onion : 2(big)
3. Tomato : 2-3
4. Chilli powder : 1/4 teaspoon
5. Coriander powder : 1 tablespoon
6. Turmeric powder : 1/8 teaspoon
7. Garam masala powder : 1/2 teaspoon
8. Ginger : 1" piece
9. Garlic : 6 flakes
10. Oil : 2 tablespoons
11. Coriander leaves : 1 bunch
12. Salt : to taste


Hard boil the eggs, remove the shell and keep aside. Finely chop the onion, ginger, garlic, coriander leaves and tomato. Heat the oil in a pan. Add chopped onion, ginger, garlic and saute till the onion turns golden. Add coriander powder and saute on low flame for 1 minute. Add chilli powder, turmeric powder,garam masala powder, tomato and salt and saute till the tomato is cooked. Pierce the eggs with a needle or fork and add to the masala and roll the eggs so that the eggs are covered with the massla. Add coriander leaves. Remove from fire and serve.

Note: 1. The boiled eggs can be fried in the oil before adding to the curry.
2. A cup of water can be added to the masala to make the gravy, if preferred
