1. Raw rice : 200 grams (unpolished/basmati /broken basmati)
2. Milk : 2 litres
3. Sugar : 750 grams
4. Ghee : 1 tablespoon
5. Cardamom powder : 1 teaspoon
6. Cashewnuts : 50 grams
7. Raisins : 50 grams
9. Dry ginger(sonth) powder : 1 teaspoon

Method of preparation:

Wash the rice. Pour the milk into a thick bottomed vessel, add the washed rice and bring to a boil. Reduce the flame and cook over low fire, stirring occassionally, till the rice is finely cooked. Add the sugar and cook for another five minutes, stirring continuously. Remove from fire Add the cardamom powder and sonth powder and stir lightly till the powders are mixed with the kheer. Garnish with the cashewnuts and raisins fried in one tablespoon ghee on low fire and serve.
