Kichhadi


Ingredients:

1.Lady finger : 100 grams
2.Green chillies : 4-5
3.Tomato : 2 (Ripe)
4.Oil : 2 tablespoons
5.Mustard seeds(sarason) : 1/4 teaspoon
6.Curry leaves : 1 strand
7.Curd : 1 cup
8.Salt : to taste

Method of preparation:


Wash and cut the lady finger and green chillies into thin rould slices. Heat oil in a frying pan. Add the mustard seeds and curry leaves. When the mustard seeds crackle, add the cut ladyfinger and green chillies and fry till crisp. Drain the oil and remove the fried vegetable to a serving bowl. Chop the tomatoes and add to the fried vegetable. Add salt as required and mix well. Before serving add the curd to the mixture and mix well . A designer kichhadi will add colour to your preparations.


Kichhadi (with coconut)


Ingredients:



1. Bitter gourd (Karela) - 2 nos.
2. Coconut (grated) : 2 tablespoons
Green Chillies : 4-6
3. Oil for frying
4. Mustard seeds(sarason) : 1/4 teaspoon
Curry leaves : One strand
5. Coconut oil : 1 teaspoon (for seasoning)
6. Curd : 1 cup
7. salt : to taste


Method of preparation:


Wash and make thin round slices of the bitter gourd. Fry till crisp in oil. Drain and remove from fire. Make a coarse powder of the fried bitter gourd. Grind the coconut and green chillies to a fine paste. Heat 1 teaspoon coconut oil in a frying pan. Add the mustard seeds and curry leaves. When the mustard seeds crackle, add the coconut paste and the coarsely ground bitter gourd . Add a little salt and bring to a boil. Remove from fire and add 1 cup of curd. Mix well and serve.
