Masala Chicken


1. Chicken pieces : 1 Kg.
2. Onion : 250 grams
3. Ginger : 25 grams
4. Garlic : 10 flakes
5. Coriander powder : 2 teaspoons
6. Chilli powder : 1 teaspoon
7. Peppercorns : 1 teaspoon
8. Ani seeds : 1 teaspoon
9. Cinnamon : 1" piece
10. Cloves : 5
11. Poppy seeds : 1/2 teaspoon
12. Green Cardamom : 2
13. Green Coriander : 1 bunch
14. Tomato : 2
15. Lemon : 1
16. Curd : 1/2 cup
17. Turmeric powder : 1/4 teaspoon
18. Oil : 3 tablespoons
19. Salt : to taste

Method of Preparation:

Clean and wash the Chicken pieces. Mix together the curd,juice of 1 lime, a pinch of turmeric powder and salt and marinate the chicken pieces in the mixture for 30 minutes. Roast the peppercorns and ani seeds on low fire till they start changing the colour slightly. Add the cinnamon piece, green cardamom, cloves, coriander powder and chilli powder and roast for anonther minute. Remove from fire, cool, add the poppy seeds and make a fine powder. Chop the onion, ginger, garlic, green coriander and tomatoes finely. In a pan, heat the oil. Add the finely chopped onion, ginger and garlic and saute on medium fire till golden brown. Add the finely chopped tomato and coriander leaves and saute till the tomato becomes tender. Add the marinated chicken pieces alongwith the marinate and saute till the excess water dries up. Add 2 cups of water, turmeric powder and the masala powder and salt. Cover the pan and cook on low fire till the chicken pieces become tender. Remove from fire. Garnish with coriander leaves and serve.

Note: 1. This dish can be made with mutton pieces instead of chicken. The mutton pieces should be marinated in the juice of 2 lime, salt and turmeric powderfor 30 minutes and cooked in a pressure cooker for 10 minutes before adding it to the onion,ginger,garlic,tomato mixture.
2. No curd should be used for mutton preparation.
