1. Bengal gram dal(chana dal) : 1 cup
2. Onion : 1(chopped)
3. Green chillies : 4 (chopped)
4. Curry leaves : 10
5. Ginger (chopped) : 1 teaspoon
6. Chilli powder : 1/6 teaspoon
7. Asafoetida(hing) : a pinch
8. Baking soda : a pinch
9. Salt : to taste
10. Oil : for deep frying
Method of Preparation:
Soak the dal in water for 2 hours. Wash, drain and grind to a coarse paste.
Add the rest of the ingredients except oil and make a dough.
Heat oil in a frying pan.
When the oil is heated, reduce the flame to medium.
Make a lemon size ball of the dough. Place it in the left palm. Press the ball with the palm of the right palm so that the vada gets a flat round shape.
Drop it in the heated oil.
Repeat the process with the remaining dough. Fry the vadas. turning them occassionally. till they are cooked and becomes crisp.
Drain the vadas, remove from fire and serve with coconut chutney.
